Easy Vegan Pesto Pasta

Ingredients:

Easy Vegan Pesto Pasta 

  • 1 packed cup of basil
  • 1/4 cup nutritional yeast
  • 2 small cloves of garlic
  • 3 tbsp Bertolli Olive Oil olive oil
  • the juice of 1 small lemon
  • 1/2 cup sunflower seeds + a generous pinch of salt to a blender or food processor.

Directions:

  1. Add 1 packed cup of basil, 1/4 cup nutritional yeast, 2 small cloves of garlic, 3 tbsp Bertolli Olive Oil, the juice of 1 small lemon, 1/2 cup sunflower seeds + a generous pinch of salt to a blender or food processor
  2. Pulse together until you’ve reached your desired consistency
  3. Blistered some cherry tomatoes by adding them to a pan with a splash of water
  4. Covering with a lid
  5. Let it cook for about 5 minutes before pushing them down to pop with a spoon
  6. This pesto is incredible with pasta, but can also be added to sandwiches, salads, or as a dip
  7. Enjoy!

Creamy Zucchini Sauce Pasta

Ingredients:

Creamy Zucchini Sauce Pasta

  • 8 oz dry pasta
  • 1 shallot, diced
  • 3 cloves garlic, minced
  • 1/2 tsp each: salt, black pepper, red chili flakes,
  • 3-4 medium zucchini (~600g), chopped
  • 8 oz (~250g) mushrooms, chopped
  • 2 tbsp miso paste
  • 3 tbsp nutritional yeast
  • 2-3 tbsp Bertolli Extra Virgin Olive Oil

Directions:

  1. Cook your pasta according to package instructions, drain and set aside
  2. Meanwhile, saute the shallot, garlic, and aromatics in a large greased skillet
  3. Once fragrant, add in zucchini and mushrooms
  4. When the zucchini is caramelized (about 8 mins)
  5. Reserve the mushrooms and transfer the mixture to a blender with all remaining ingredients
  6. Blend until creamy, then pour back into the skillet along with the cooked pasta. Mix thoroughly and season with lemon juice to taste.

Cream Tomato Sauce Pasta

Ingredients:

Creamy Tomato Sauce Pasta

  • 1 cup canned crushed tomatoes
  • 1/4 cup Bertolli Olive Oil
  • 2 cloves of garlic, minced
  • 2 tsp Italian seasoning
  • 1/4 cup nutritional yeast
  • 1/2 of a large avocado

Directions:

  1. Heat a large pan over medium heat. once heated, add the olive oil and reduce heat to low
  2. Stir in garlic cloves, then stir in crushed tomatoes and Italian seasoning,  allow to simmer over low heat for about 30 minutes until heated through and fragrant
  3. In a blender, blend the avocado and nutritional yeast with the heated tomato sauce ingredients until very smooth. season with salt and pepper, blend again, then serve
  4. Enjoy!
