Quick Pasta Recipe and Roasted Red Pepper Sauce

Ingredients:

  • 3 bell peppers [450-500g]
  • 1/3 onion [100g]
  • 3 cloves garlic
  • 1 1/2 tablespoons Bertolli Extra Virgin Olive Oil
  • 1 tablespoon nutritional yeast [5g]
  • 1/2 cup non-dairy milk [120ml]
  • 1/4 teaspoon salt
  • pinch of pepper flakes
  • 8 oz pasta of choice

Directions:

  1. Preheat oven to 375F
  2. Cut peppers in half, onion into chunks and peel garlic
  3. Place on a baking sheet lined with parchment paper
  4. Roast in the oven for 30 minutes or longer if you like
  5. Boil the pasta
  6. Once the peppers are done roasting add them into a blender with the nutritional yeast, salt, non-dairy milk, 1 tablespoon of Bertolli Extra Virgin Olive Oil and red pepper flakes
  7. Blend until smooth
  8. Top on pasta and cook on the stove for a few minutes to help thicken the sauce
  9. Enjoy with vegan cheese, more fresh parsley, and red pepper flakes!
CHOCOLATE OLIVE OIL BREAD WITH BERTOLLI

Chocolate Olive Oil Bread

Ingredients:

  • 1/2 cup sun butter
  • 1/4 cup Bertolli Extra Virgin Olive Oil
  • 3 eggs
  • 1/3 cup cocoa powder
  • 1 teaspoon baking powder
  • Chocolate chips (optional)

Directions:

  1. Preheat oven to 350 degrees
  2. In a medium bowl, combine sun butter, Bertolli extra virgin olive oil, and eggs
  3. Once combined, fold in cocoa powder and baking powder
  4. Add in chocolate chips if desired
  5. Pour batter into a lined loaf pan, top with additional chocolate chips and bake in the oven for about 30-35 minutes
  6. Enjoy!
