Roasted Garlic Farfalle Pasta

Ingredients:

  • Maldon salt
  • 1 tablespoon Bertolli Extra Virgin Olive Oil
  • 5-6 garlic cloves
  • ½ lb farfalle pasta
  • 1.5 cups heavy whipping cream
  • Crushed black peppercorns

Directions:

  1. Coat the garlic in Bertolli Olive oil and roast it in the over at 400 °F for 15-20 minutes
  2. Blend the garlic and cream
  3. Season with a little bit if the Maldon salt
  4. Transfer to a large skillet and let it simmer while you cook the pasta
  5. Top with black pepper and parmesan (optional)
  6. Enjoy!

Roasted Cherry Tomato Pesto

Ingredients:

  • 2 cups cherry tomatoes, oven-roasted⠀
  • 1/2 cup sun-dried tomatoes⠀
  • 2 garlic cloves⠀
  • 1 lemon, juiced⠀⠀
  • 1/2 cup Bertolli extra virgin olive oil⠀
  • 3 tablespoons nutritional yeast (optional)⠀
  • 1/2 cup raw almonds or pine nuts⠀
  • pinch sea salt & pepper, to taste⠀⠀⠀

Directions:

  1. Heat oven to 400F and line baking sheet with parchment paper
  2. In a large bowl, add tomatoes and garlic cloves and drizzle with Bertolli olive oil to coat and toss
  3. Place tomatoes and garlic on a baking sheet and roast in the oven until blistered. Remove from oven and turn off the heat
  4. Add all ingredients (with tomatoes) into a high-speed blender and blend to your desired consistency
  5. Taste and add more sea salt, lemon juice or pepper to your liking
  6. Pour sauce into a jar to save or use for pasta immediately.
  7. Enjoy!
